Food Truck REVIEW : T’s Chips

‘Tis the season for food trucks. They are popping up across the wedge for another picnic season. We are opening up a section on our “Where to Eat” page for the most unique food trucks. We open with T’s Chips, a service brand well-known for 34 years in Smiths Falls, nestled on Garden Market‘s land.

Laurel and Robert Firlotte purchased T’s Chips, and opened for business on April 12, 2016. Unaware, I showed up on the very anniversary of their first day. There was no cake, balloons or fanfare. It was overcast, chilly to-the-bone, not a glorious backdrop; yet, this couple was focused and hopping to please customers shivering at the wicket.

This energetic couple is passionate about keeping its sourcing, “100% local.” They are keenly aware of the need to offer gluten-free buns; so, renown, Purest, Perth, is their supplier.

We selected four menu items for my tasting (below); but, the one item that surprised me was the barbecue sauce. It was so good Robert filled a tablespoon twice for my tasting. The sauce is made from 20 ingredients, flavors that are complex and hard to peg. It is after all a secret recipe developed by Robert himself. This sauce should be bottled and sold on store shelves. I imagine this gentle man smiling from a label, in his distinct, blue coiffe, “Firlotte’s Secret Sauce,” and bringing in the ‘ka-ching’. I digress.

“People don’t mess with their Canadian burger,” Laurel chides me as inquire about mustard. “People don’t add toppings.” Makes sense, once you take the first bite.

Now, one important fact about T’s Chips is that all food is “scratch-made” i.e. no added preservatives, dyes or additives. Robert works feverishly to order; nothing is pre-prepared. It’s all fresh. That’s impressive.
